Cinnamon Cookies

Ingredients

  • 125 grams all-purpose flour
  • 1/4 tsp baking soda
  • 1/8 tsp table salt
  • 90 grams unsalted butter room temperature
  • 70 grams brown sugar
  • 25 grams granulated sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  • Preheat the oven to 375°F and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking soda and salt. Set aside.
  • In a large bowl, cream together butter, brown sugar and granulated sugar until the mixture is fluffy and lightened in colour.
  • Mix in the egg until mixture is smooth.
  • Mix in vanilla extract, cinnamon and nutmeg.
  • Add the flour mixture and mix until just combined.
  • Divide the dough into 6 balls using a 1/4 cup scoop, placing them evenly spaced apart on the baking sheet. Leave at least 3 inches (7.5 cm) between each cookie).
  • Bake for 8-10 minutes, or until the cookies are golden around the edges.
  • Let cool on the baking sheet.
